WHere is a simplified take on a drink from the seasonal drinks list. It's a party-sized pre-mixed which is loaded full of tastes of the Christmas time, which makes it perfect for a celebration. Any leftover cordial you can use for breakfast cocktails, sweets, or to mix another batch of bikinis.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Syrup: Combine every ingredients in a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Then, turn off the stove and let it to cool completely. Transfer to a clean bottle, seal keeping it in the refrigerator, where it will keep for up to one month.
For the Batch Mix: Pour every liquid ingredients in a sizeable container, let it rest for 60 minutes, then pass it through preferably using a fine cloth, so it's perfectly clear.
When ready to serve: Add 85ml from the cocktail base into a mixing glass filled with ice, and stir lightly for a minute to cool it down. Pour into an cold coupe glass or equivalent, garnish with the cranberries and finish by giving it a brief mist with the mandarin essence over the top.
